01 • Split
Place one vanilla bean on a clean, dry cutting surface. Using a sharp paring knife, carefully split the pod lengthwise.
02 • Open
Gently spread the two sides of the pod to expose the dark vanilla caviar.
03 • Scrape
Run the dull edge of the knife along the inside of the pod to collect the caviar.
04 • Add
Stir the caviar directly into custards, creams, baking mixtures, ice cream or other recipes.
05 • Keep the Pod
Do not discard the scraped bean. Use it to infuse sugar, milk, cream, syrup, coffee or cacao, or reserve it for homemade vanilla extract.
Culinary Uses
Custards & Creams: Add the caviar directly for rich vanilla aroma and characteristic black flecks.
Ice Cream: Use both the caviar and pod during preparation for a full whole-bean vanilla character.
Baking: Ideal for cakes, biscuits, pastries, icing and other recipes where genuine vanilla is meant to be noticed.
Coffee & Cacao: Steep a scraped pod or use a small amount of caviar for aromatic vanilla depth.
Vanilla Sugar: Bury a scraped pod in a sealed jar of sugar and allow its remaining aroma to infuse.
